Strawberry Daquiri Pie
Add two envelopes unflavored gelatin to 1/2 cup cold water and set aside. Combine one can frozen Bacardi strawberry daquiri concentrate, 1/3 cup sugar, and 3/4 cup water in a saucepan over low heat. Stir constantly until the concentrate melts and the sugar dissolves. Add the softened gelatin (it'll kind of look like applesauce by now) and stir until it dissolves. Chill until the mixture is syrupy. (to save time, I put it in the freezer- it takes about 20-30 minutes) While that's chillin', chop up a small bag of frozen strawberries. Add these, along with one container of light or fat free Cool Whip, to the chilled stuff and put it back in the freezer for another 30-45 minutes, or until it mounds when dropped from a spoon. Spoon it into a pre-made pie crust (Keebler graham cracker crusts are great) and slice a few strawberries to garnish if you're trying to impress someone with your culinary skills. Chill the whole pie for another hour or two and it'll be ready to go. Variations: This whole recipe is basically a variation of other recipes I've seen, so it's all pretty open to interpretation. The amounts of fruit and Cool Whip are intentionally vague- add as much or as little as you want. Raspberry Rum Runner concentrate w/ frozen raspberries is also good, and of course the ambitious people out there can use fresh fruit or make your own crusts or whatever. I've never made it with the alcohol, so I'm not sure how well that would work. |
